What is Sans Gluten @ JWU?
We are a student group on the Johnson & Wales University, Providence campus. Our goals is to raise awareness and educate those on our campus (fellow students, Chefs, faulty, and staff) on Celiac Disease and Non-Celiac Gluten Sensitivity.
Who is Sans Gluten?
We are made up of about 40 students with concentrations in baking and pastry arts, culinary arts, and culinary nutrition.

What happens at the meetings?
Some meetings are informational meetings, but the majority of our meetings are production meetings. At the production meetings we take recipes and then reformulate them with various flour blends to make them gluten-free. Each group of students (usually 3-4 per group) come up with their own blend of flours that they think would work best in the recipe.
When does Sans Gluten meet?
Currently we meet about every other week on either a Tuesday or Thursday evening on the Harborside campus from 8:-9:15 and occasionally some Friday mornings to larger production events.
Do you have to have Celiac Disease or Non-Celiac Gluten Sensitivity?
No! Actually, the majority of our members do not have Celiac Disease or Non-Celiac Gluten Sensitivity. They are here to learn more about gluten-free cooking and baking.
Do you have to be majoring in baking & pastry, culinary, or culinary nutrition to join?
No! The requirements are:
To attend out production meetings you must have paid your dues – $10.00 for the year.
Production meetings require FULL UNIFORM: pressed jacket and pants, chefs hat, apron, color, name tag, and no jewelry (earrings, rings, etc.)
And: be a currently enrolled Johnson & Wales Student. Have an interest in learning about gluten-free cooking, baking, diet, etc. Have an open mind and willing to have fun and experiment with us.
What if I do not have a uniform?
Don’t worry – we will find one for you, just let us know in advance that you are interested and we will find you one.

What we could use: equipment so we can guarantee that everything is 100% gluten-free (rolling pins, sheet pans, silicone molds, pastry brushes, cookie cutters, dough cutters, etc.), FLOURS and other gluten-free baking ingredients so we can continue our club and production meetings.
